The Avocado Smoothie

Avocados. Oh, avocados. Why you got to be so delicious? The health benefits of eating avocados are immense – they are one of the healthiest fats you can find, provide a healthy dose of fibre, and in my humble opinion are probably one of nature’s perfect foods. A little hint: You might be tempted to skimp on cheaper avocados, but for this smoothie get a beautiful, big avocado and go to town.

True story:: I once dated a man who hated avocados.

That’s the story.

We aren’t together now.

Feel free to use frozen or a nice ripe avocado.

INGREDIENTS:

  • 1/2 of a large avocado or 1/3 cup frozen avocados
  • 1 cup spinach
  • 1 1/2 cups unsweetened almond milk (or non-dairy milk of choice. Cashew? Oat?)
  • 1 tsp pure vanilla extract or almond extract
  • 1 date or 1 tbsp of maple syrup
  • 1/8 tsp salt
  • Scoop of protein powder (optional but a little vanilla protein powder makes it even creamier)
  • 2 ice cubes

DIRECTIONS

  1. Mix all the ingredients together in a high speed blender and serve immediately.
