Get Your Greens!
Greens are one of the best foods you can eat to both fill you up with fibre and provide you with nutriets. Dark leafy greens like organic mixed leaves, combined with Napa and red cabbage, pea shoots, and romaine will provide the body with a variety of nutrients .
Eating the rainbow is necessary: we eat different colors because they provide us with different vitamins. Shredded carrots in this salad offer lots of Vitamin A and edamame gives the salad a protein push. Enjoy with this apple-cider vinegar & maple syrup dressing.
Though we have refined sugars off the menu during the Healthy Six, sweeteners like maple syrup and date are okay in moderation.
Salad For Two Ingredients
- 1 cup mixed greens
- 1 cup shredded napa cabbage
- 1/2 cup purple cabbage
- 1 stalk celery, thinly sliced
- 1 avocado, diced
- 1 carrot shredded
- 1 cup edamame, steamed for 3-5 minutes then drained
- Sea Salt
Dressing
- 1/2 cup apple cider vinegar
- 2 tbsp maple syrup
- 1 tbsp Dijon mustard
