The best part about smoothie bowls really is the toppings. In our house you can lay out bowls of fresh fruit, nuts, coconut, almond butter to drizzle, freshly chopped mint. lime zest – anything goes for sprinkling on top. Consistency is the key here – you want enough thickness to eat with a spoon.
Smoothie Ingredients (Serves 2)
- 2 cups frozen berries (raspberries, cherries, strawberries, blackberries, or mixed berries1
- 1/4 cup canned coconut milk (shake it up first)
- 1/2 cup almond milk.
- 1 tbsp ground flax
- 3-4 chunks frozen avocados.
- Water to taste (depending on if you need it thinner)
- 3-4 ice cubes.
Blend all ingredients together in a Vitamix for over a minute until slightly blended Pour into bowls and add toppings.
