Apple Cinnamon Muffins (GF, Paleo, Refined Sugar-Free)

These are the moistest kids on the block. Packed with high-fibre apples in puree, grated and chopped form, they come 

  • 1 cup applesauce
  • 1/3 cup coconut oil, melted
  • 1 egg or flax egg
  • ¼ cup maple syrup
  • ½ cup coconut sugar
  • 1 apple, grated
  • ½-1 apple, finely diced
  • 1 ½  cups gluten-free oats
  • 1 cup gluten-free flour or rice flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp cinnamon

Whisk together all the wet ingredients, then add the dry ingredients. Fill muffin tins ¾ full and bake at 350 for 12-15 minutes until a knife inserted comes out clean. These are fantastic, portable and freezable.  They are also insanely moist. I think I hit the nail on the head with these my friends. I also think you could do with less sugar, but it is up to you.
