I have a guilty confession. I love peanut butter. Like, I truly love it. And is this so bad?
If you know me, there is not such thing as “good food’ or “bad food” so I have decided to come clean on my passion for all things peanut butter. Everything in moderation, right? Now, the thing about peanuts is they CAN cause inflammation in our belly. But, if we are having a treat – and who wants to live in a world without treats – you cannot go wrong with these PB cup energy balls.
Am I the only mom who rifles through her kids Halloween bags in search of the Reece’s? To quote Sam Smith, I know I’m not the only one. 🙂 These energy balls are SO popular, and I have been making them for SO long that I had to finally give the recipe away. I made them for a fitness event, and everyone asked for the recipe. They are dead simple, and freeze well. I personally LOVE making them with crunch peanut butter but you do you. A note: Please check the label on your peanut butter – many have cane sugar or additives. We want pure peanuts, that’s it.
Ingredients

- 1 cup of smooth or crunch all-natural peanut butter
- 1 tbsp melted. coconut oil
- 1 tbsp maple syrup
- 1 1/2 cups gluten free oat flour (you can make your own easily: take 2 cups of gluten free oats and buzz in a food processor or high speed blender)
- 1/2 cup almond meal (or more oat flour
- 1/2 tsp sea salt
- 2 tbsp hemp seeds.
- 1/2 cup Mini Chocolate Chips (can omit, but why on earth would you?
Instructions
Warm up the coconut oil and maple syrup in a bowl. Add the peanut butter and whisk for a solid 2 minute until smooth. Add the oat and almond flour (you may need a little more flour) and the hemp seeds and sea salt. Let cool if still warm, then mix in the chocolate chips. Roll into 2-inch balls and store place in freezer for a quick set. Try to only eat one.
