These are my go to for school birthday celebrations and bake sales – healthy cookies with little added fat, lots of healthy sugars and gluten-free oats. I love adding the buckwheat groats for crunch but you can keep them simple with this basic, tried and true recipe. The best thing about these cookies is that you can add whatever you want in the end!
- 2-3 ripe bananas (depending on size – three small or two large)
- 2/3 cup dates
- 1/4 cup coconut oil, melted
- 2 cups gluten free oats
- 1/2 cup coconut
- 1/2 cup buckwheat groats (optional)
- 2 tsp cinnamon
Add-ins: chocolate chips, dried cranberries or cherries, pumpkin seeds, sunflower seeds
Blend the bananas, dates and coconut oil in a food processor until smooth and creamy. Scrape into a bowl with a spatula, then add the dry ingredients. Form into large cookie dough balls and place on parchment-lined baking sheet. Bake 350 8-10 minutes. Freezes well.
