When I lived in Mexico City for a year, I ate black beans every single day – I would often sauté them with a little red onion and jalapeño and serve them with fresh tortillas (that I would buy for about a peso a pound – 20 cents!!!) and chipotle salsa.
Black beans are a great source of protein, high in fibre, potassium and magnesium. They should be a staple in everyone’s diet, and can contribute to weight loss as the protein and the fibre will keep you full longer.
In our house, healthy snacks are always available – but you can get real bored, real quick of hummus and veggies. You need some other dip ideas to go with gorgeous crunchy crudités – Enter the Bust-it Out black bean dip.
INGREDIENTS
- 1 15-oz can of black beans, rinsed and drained
- 1/4 cup minced red onion
- 1/3 cup chopped cilantro
- 1 lime, zested and juiced.
- 1 tbsp rice wine vinegar
- 1 clove garlic finely minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon kosher salt
INSTRUCTIONS

Place all the ingredients into a food processor, and blend until smooth, adding water as necessary.
